How to care for your custom wood boards and knives

​I highly recommend maintaining your board with a food safe mineral oil or my Board Balm to keep your board protected and looking like new. End grain boards dry faster than face/edge grain, so it's important to get on a monthly maintenance schedule of oiling your block to prevent drying and cracking. Your board will come seasoned with a food-grade mineral oil/beeswax Board Balm. To maintain the board properly, follow these instructions and your board should last for years to come.

Hand Wash Only - DO NOT PUT IN DISHWASHER

Hand wash in the sink with warm water and mild soap, then dry with a cloth. Let it thoroughly dry resting on rubber feet or on edge if no feet so both sides are exposed to air. Do not lay flat without feet as warping could occur. Should warping occur, lay cupped side down for 24 hours or so. The board should flatten as it dries.

  • NEVER let your board sit or soak in the sink. Soaking in water will damage the board.

  • NEVER put your board in the dishwasher.

  • NEVER use bleach. This can stain and/or excessively dry the wood.

  • NEVER lay a wet board without feet flat to dry. This will cause the board to dry faster on one side and the wood will warp.

 Deep Cleaning

For deeper cleaning, sprinkle your board generously with salt and then rub from one corner to the other with the cut side of a lemon. Rinse with clean water and immediately dry with a soft cloth and let completely dry as mentioned above.

Disinfect and Deodorize

For stubborn odors or for disinfecting, spray or wipe white vinegar on the wood cutting board and let sit for a few minutes; wipe it with a damp warm cloth and then wipe dry. White vinegar is an excellent disinfectant for E. coli, Salmonella, and other household bacteria. The vinegar odor will evaporate as it dries.

 Remove Stains and Deodorize

Combine 2 tablespoons of baking soda, 1 tablespoon of salt and 3 tablespoons hot water to create a safe, non-toxic cleaning paste. Scrub the entire surface of the cutting board then wipe it with a warm wet cloth and dry with a soft cloth. 

Regular Maintenance

Apply Board Balm by hand once a month or when your board starts to appear dry. Let it dry overnight, then buff using a clean, dry cloth or paper towel. Store in a dry area away from extreme temperatures.  My Board Balm is a mixture of food safe mineral oil and natural bees wax. This acts as a physical barrier on the surface of the wood that protects against stains and liquids. The wax also aids in sanitation, as it fills and seals in knife scars and microscopic cracks where bacteria would otherwise gather.  Natural oils such as vegetable, corn, olive, peanut or walnut oil are not recommended as they are rich in fats that will eventually oxidize and go rancid, creating a foul-smelling board.

Refurbishing Your Wood Cutting Board

Knife marks are unavoidable on a well-used cutting board over the years. The wonderful thing about a wood board is that it can be returned to its former glory. All you need is three different grits of sandpaper (100, 180 and 220) and a sanding block. Start with the more coarse 100 grit (for deeper cuts), then the 180, and finish with the fine 220 grit. Once you are finished sanding, wash your board, let it dry completely, and apply Board Balm as you would for regular maintenance.

Wooden Knives

Your wooden knives should also be maintained regularly by cleaning with mild soap and warm water, hand drying, and wiping with board balm.
